
This is a great twist from a traditional pizza. I originally got this from a First Place recipe, I think, but had adapted it to fit what we can do here. So, here is my version:
1 pizza crust (homemade or store-bought)
2 Tbs. commercial pesto
2 large tomatoes, sliced
4 oz. thinkly sliced fresh mozzarella cheese
1/4 tsp. pepper
1/4 tsp. basil (fresh is preferred, when available)
Place crust on cooking tray coated with cooking spray; bake 5-10 minutes (if it gets puffy, it's been too long). Spread pesto evenly over crust, leaving a 1/2 inch border. Top with mozzarella cheese slices and tomato; sprinkle with pepper. Bake for 10-15 minutes, or until cheese melts. Sprinkle with basil.
