Turkey Soup2 cups turkey
8 cups water
1 onion, chopped
1 c. celery, diced or chopped
1 c. carrots, chopped
2 cloves of garlic
1 tsp. each of marjoram, savory, thyme
salt and pepper
cooked noodles or rice, approx 1 cup
water
cream (for adding to soup)
Okay, I'm going on my memory here of how I made this soup! :) Put 2 cups turkey and 8 cups water in a large pot. Put to medium boil for 2-3 hours. In the last 40 minutes of cooking, add the chopped onion.
Add the celery, carrots, garlic, and spices to the pot and continue to cook slightly uncovered on low to medium for another hour. Add water as needed, depending on how soupy you like it. Add noodles or rice. Before serving, stir in cream. This just changes the color from broth-like to creamy-like.
Serve and enjoy! This made approx 10 medium-sized bowls of soup (and no leftovers!).
