Makes pastry for 1 casserole
2 1/4 cups all-purpose flour
1/2 tsp. salt
1/2 cup cold vegetable shortening, diced
1/4 cup cold unsalted butter, diced
1/4 cup cold water
Position knife blade in food processor bowl; add flour and salt, pulsing to combine. Add shortening and butter; pulse until mixture resembles coarse meal. With processor running, add cold water through food chute, processing just until combined.
Press mixture gently into a 4" disc; cover with heavy duty plastic wrap; and chill 1 hour.
