Sweet Blueberry Muffins

Baking Spray
1 egg
1 egg white
1/3c. applesauce
1/4c. sugar
1/4c. maple syrup
1 1/2c. skim milk
1c. all-purpose flour
1 1/2c. whole wheat flour
1 1/2Tbsp. baking powder
1/2c. wheat or oat bran
1/2c. frozen unsweetened blueberries

Line 18 large muffin cups with paper liners or spray with baking spray. In a large bowl, combine the egg whites, oil, sugar, syrup and milk. In a medium bowl combine the flours and the baking powder. With a fork stir the dry ingredients into the liquid, blending just until moistened. Fold in the bran and blueberries. Spoon the batter into the prepared cups, about 2/3 full. Bake at 375 F for 23 minutes or until lightly browned. Cool on a wire rack.
