Vegan Chocolate Avocado Cake
Somebody had a birthday - our eldest son is now three years old!
This year, I really wanted to make a birthday cake for him, and not cupcakes. I wrote my FB friends for their suggestions for a healthy cake, and this is what I received back from a friend! This cake was superb. It was moist, and wasn't super sweet, although there are two cups of sugar in the cake. There is a avocado buttercream frosting to go along with this, but I took my friends' recommendation and did not make it. instead, I made a cream cheese frosting.
Vegan Chocolate Avocado Cake
3 cups all-purpose flour
6T cocoa powder
1/2 tsp. salt
2 tsp. baking powder
2 tsp. baking soada
2 cups sugar
1/4 cup vegetable oil
1/2 cup soft avocado, well-mashed, about 1 medium avocado
2 cups water
2T white vinegar
2 tsp. vanilla extract
Preheat oven to 350F. Grease and flour two round cake pans. Set aside.
Sift together all the dry ingredients, except the sugar. Set that aside, too.
Mix all the wet ingredients together in a bowl, including the super mashed avocado.
Add sugar into the wet mix and stir.
Mix the wet with the dry all at once, and beat with a whisk (by hand) until smooth.
Pour batter into greased cake tins. Bake for 30-40 minutes, until a toothpick insterted comes out clean.
Let cakes cool in pan for 15 minutes, then turn out onto cooling racks to cool completely before frosting.
Next time, I would like to make some small changes in this recipe, and see if I can lower the calorie intake any...we'll see! It was worth every bite...yum!
