As we await the birth of Little Lundquist, I decided to make a few meals that could be easily made and frozen to use at a later time. Granted, we don't have a large freezer here...it's probably about a quarter of the size of good 'ol American freezers.
There are also not large foil pans easily available. The largest size in the grocery store that I found is about an American loaf pan size. I decided that this is actually more practical for feeding just the two of us! Plus, if the pans were much larger, it would take up too much of the precious, limited space!
So, here is what I decided to bake and freeze:
Dinners for two (or more):
Paprika Pork
Vegetable Lasagna
Mini Meat Patties
2 whole chickens
Chicken Noodle Cream Soup
Treats for Guests:
Crackle Spice Cookies
Poppy Seed Bread
Items I decided to stock up on:
- basil tomato sauce
- pasta noodles x3 packages
- cereal x2 boxes
- baking goods: flour & sugar
I really would have liked to have made more/frozen more. It's been on my list to do so, but just hasn't happened (and this post keeps getting put off longer and longer...). The grocery store IS just around the corner from our place, and Eric can easily get there to pick up what we need (as it is, he went with me last week to carry the groceries home!). I'm also very thankful to have a hubby who cooks, and enjoys doing so! I usually don't "plan it in" to my calendar to have him cook...but the change of pace will be nice in the time after the baby's birth; and I already know he won't mind picking up in doing some of the cooking! :)
