Barbecue Pork
The other day, Eric bought a couple packages of meat that were on sale for half price at the grocery store. One package was a 1 kg (approx. 2 lbs) pork roast. I found a recipe this morning for Barbecue Pork, and we finally opened a jar of barbecue sauce from Eric's hometown that we've had quite a while. I mixed 1 cup of bbq sauce, 1 cup of soda water, green onions, and poured the mixture over the pot roast in the crockpot to let it cook for 4-6 hours on high. It came out delicious, paired with whole grain rice and tasty sugar snap peas! We'll be eating the bbq pork leftovers tomorrow night as sandwiches.
