tastes of fall: pumpkin

Pumpkin Spiced Oatmeal Pecan Cookies…At just 5 points (weight watchers) for two cookies, these are fabulous! Even after a few days, they have retained their moistness, unlike normal chocolate chip cookies that I make.

Pumpkin Streusel Muffins…yum! I made these and took them to a TEAM Austria gathering, and they were a hit! I would definitely make these again. Note: only normal-sized muffins, not mini!

Pumpkin Roll-Up…I tried this recipe for the first time last year, I think, and it was sooo yummy! I decided to try it again; and this time, I made it for a dessert when friends came over.

Pumpkin Puree, since it’s not sold in a can here! I am so impressed, really. I bought a Hokkaido Pumpkin on sale at Spar recently. For around two dollars, I have been able to make all of the aforementioned pumpkin recipes, and still have more to use!

I’m still hoping to make:

Pumpkin Ginger Scones…I wanted to make these before I got on another healthy eating kick. But alas, I didn’t. The downside to this recipe is that it is not use whole wheat flour. But I love scones,and still want to try it out.

& there is a request for an honest to goodness pumpkin pie (although I’d much rather wait until we get back to the US and make the canned version!). I’m thinking about trying this Perfect Low Fat Pumpkin Pie.

I’m going to make these Pumpkin Chocolate Chip Cookies to give as a thank you to our children’s workers before we leave. I hope they like them! :)

I just read a recipe for a spiced pumpkin latte, which sounded heavenly, but I can’t imagine how many points (weight watchers) it would be! Although I want to try it, I may have to pass it by this time!
