Mini Meatballs with Dip

My family LOVES this recipe! It is one from my German Weight Watchers book. One portion (6 mini meatballs) = 4.5 pts. The recipe makes enough for four portions (24 mini meatballs), but I already know that I'll be making a double recipe in the future {and probably not even bothering with the *mini* idea when my boys are teenagers!}.

1/4 onion, finely chopped
250g ground beef
3 tsp. parsley
1 egg
1/2 Tbsp. Herb Soup Powder (Kräutersuppenpulver)
2 tsp. shredded cheese
1 tsp. vegetable oil

For the Dip:
1/2 small cucumber (or I use zucchini), finely chopped or grated
100g Magertopfen
1 cup light sour cream
2 tsp. mixed herbs
1 tsp. lemon juice
1/2 tsp. pepper
salt

Mix together the onion, ground beef, parsly, egg, and soup mix. Add the shredded cheese, then sprinkle in salt and pepper. With wet hands, form approx. 24 balls; then place in a frying pan (coated with the oil) to cook.

If using cucumber, salt it, let it rest, then squeeze out the water. You don't need to do this with zucchini. Mix the cucumber or zucchini with the rest of the dip ingredients.

Yummy!
