When I make pancakes, these are what I make. These are a favorite recipe, and with the oatmeal & whole wheat flour, they are quite healthy! :)
1/2 c.+ 2 Tbsp. (quick-cooking) oats
1/2 c. whole wheat flour
1/2 c. all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/3 c. packed brown sugar
1 egg
3 Tbsp. applesauce (or 2 Tbsp. veg. oil)
1 c. buttermilk (+more for consistency)
1) In a bowl, combine the oats, flours, baking soda, salt & sugar. In a smaller bowl, beat the egg, oil, and buttermilk. Stir into dry ingredients until just moistened.
2) Pour batter by 1/2 cupful onto a greased hot griddle. Turn when bubbles form n top; cook until the second side is golden brown.
Serves 6.
