Summery Chicken Salad

It might be the middle of winter, but I still tried this "summery" recipe the other day.  It was very good and I'll definitely be making it again!


6 cupes chopped cooked chicken
1 1/4 cups sliced celery
1 (8 oz) can pineapple tidbits, drained
1 1/4 cups reduced fat mayo or miracle whip
2 1/2 Tbsp. dry white wine
3/4 tsp. salt
3/4 tsp. curry powder
various fruits (suggested from recipe are: apples, cantaloupe, green grapes, strawberries & blackberries)
lettuce leaves
1/4 cup chopped walnuts, toasted (optional)
Garnish: celery leaves

Combine first three ingredients in a large bowl; set aside.
Combine mayo and next three ingredients.  Add to chicken mixture, tossing to coat.  Cover and chill 1-2 hours.
Arrange various fruits on lettuce-lined serving plates; top each with chicken mixture.  Sprinkle evenly with toasted walnuts. Garnish, if desired.  Yield: 6 servings.
