Ravioli with Zucchini

Ravioli with Zucchini

I saw this recipe in the Detroit Free Press from March 29, 2009. It is a very easy recipe.

Ingredients:
18 oz refrigerated cheese ravioli
1 medium zucchini
1 clove garlic
1 Tbsp. olive oil
1/2 tsp. each salt and pepper
1/4 c. grated parmesan cheese

Directions:
Cook ravioli according to package directions. Meanwhile, cut zucchini in half lengthwise, then slice into semicircles. Peel and chop garlic. Drain ravioli and set aside. Heat oil in empty pasta pot over medium-high heat. Add zucchini to pot; season with salt and pepper. Cook until crisp-tender and glossy, about 3 minutes, stirring frequently. Add garlic; cook 1 minute, stirring constantly. Turn off heat and add drained ravioli and Parmesan to pot; toss until coated.

I actually made this as a large recipe to take to a family in our church. Partnered with a salad, bread, and dessert, it made an easy, yet delicious meal!
