Mac 'n Cheese

I must admit that I love good 'ol Kraft Macaroni & Cheese. It is one of my favorites. I can remember as a child when my dad was traveling, and a 'special' meal at home was mac 'n cheese. It was a meal that my dad was not fond of (which is why we ate it when he was away!). It is also a meal that my husband is not fond of...he's finds something disturbing with the unnatural color.

Well, Kraft Mac 'n Cheese is a product that we cannot get overseas. So, instead, I get out my recipe book to make Homemade Macaroni and Cheese. The recipe is originally from First Place, but I had changed it a bit a while back. Below is my recipe for it.

Homemade Macaroni & Cheese

7 oz. elbow macaroni
2-3 eggs
6 oz. shredded low fat cheese

White Sauce
7 1/2 Tbs. Flour
7 1/2 Tbs. diet margarine
1/4 tsp pepper
1 3/4 non-fat skim milk

1. Boil macaroni.
2. Make white sauce in 2 qt. sauce pan. Add cheese to melt.
3. Beat eggs slightly in a bowl.
4. Add eggs and macaroni to sauce-cheese mixture, stirring as you add. Pour into a 13x9 dish sprayed with non-stick spray.
5. Bake at 350 degrees for 40 minutes (or longer if you desire it to be golden brown on top).
6. Serve hot from oven. Sprinkle with Lawry's Seasoned Salt.
7. Enjoy!

I make a smaller pan of this, but we can usually still get 2-3 meals out of it. It's still great the following days! :)
