not-your-typical Waldorf Salad

We had company over last week, and I wanted to cook something healthy and easy. I came across this recipe in one of Rachael Ray's cookbooks - great for summer! It was so good that I made it again today for lunch. The recipe feeds 4 plentifully. Enjoy!

Smoked Turkey Waldorf Salad

(3 Tbs honey)
1 Tbs salt
1/2 tsp cayenne pepper
2 Tbs sugar
8 oz. walnut halves or pieces
2 heads endive, chopped
1 cup packed watercress leaves
1.5 lbs smoked turkey from deli, cut into 1/2 inch slices
1 green apple, such as Granny Smith, cored and chopped
1/2 lb seedless red grapes, stemmed and halved
1/4 lemon
1/4 cup whipping cream
1/4 cup mayonnaise or ranch dressing
Salt and freshly ground black pepper, to taste

Preheat oven to 425 degrees Farenheit.

Combine honey, salt, cayenne, and sugar. Coat nuts in mixture then spread out on a cookie sheet. Roast nuts 3-4 minutes, remove, and let cool.

Place endive, watercress, turkey, apple, and grapes in a large bowl. Squeeze a little lemon juice over the bowl and toss.

With an electric hand-mixer, whip cream to soft peaks, fold in mayo or ranch dressing. Add mixture to salad and toss to coat. Season with salt and pepper. Distribute among 4 plates and top with cooled caramelized nuts.

Extra Notes: With living overseas, I cannot always get ingredients that American cookbooks call for. I used turkey steaks in place of the deli meat, and fresh romaine and watercress leaves - those worked great, and the flavor was delicious!
