Grilled Pesto Pizza

I printed this recipe from the July issue of the First Place newsletter. I made this last night for dinner, then made a second pizza for our Young People's Bible Study. It was a hit! The only difference is that I did not grill it...instead, I cooked it in the oven.

- 1 pizza crust (thin is best)
- 2T commercial pesto
- 4 oz. thinly sliced mozzarella cheese
- 2c. chopped tomatoes (about 2 large)
- 1/4tsp crushed red pepper
- 1/4c. thinly sliced fresh basil

Prepare grill (or oven). Place crust upside down on grill rack coated with cooking spray; grill 4 minutes. Turn crust, grill-mark side up, and spread pesto evenly over crust, leaving a 1/2" border. Top with mozzarella cheese slices and tomato; sprinkle with pepper. Grill for 5 minutes or until cheese melts. Sprinkle with basil.


Exchanges: 3 breads, 1 meat, 1 vegetable, 1.5 fat
