Apple All-Spice Muffins

Apple All-Spice Muffins1/4c. margarine
1/2c. brown sugar
1 egg
1 1/2c. flour
2 tsp. baking powder
1/2 tsp. ground all-spice
1/4 tsp. salt
3/4 c. milk
1c. finely chopped apple
1 Tbs. cinnamon/sugar mixture

Cream margarine in a medium bowl; gradually add brown sugar, beating at medium speed until light and fluffy. Add egg, and mix well. Combine flour, baking powder, all-spice, and salt. Add to creamed mixture alternately with milk, stirring just until moistened. Stir in finely chopped apple. Spoon batter into muffin pans coated with cooking spray; filling 2/3 full. Sprinkle with cinnamon mixture. Bake at 400 degrees for 20 minutes.

My comment: This recipe actually calls for a topping of flour, sugar, and margarine. I've made it in the past, but today chose not to do it (to eliminate the extra mess), and liked the results much better! I have a hard time finding muffin recipes that are low-cal...but this one has just under 100 calories per muffin!
