Strawberrry Cheesecake French Toast

Strawberry Cheesecake French Toast, Christmas Eve brunch for Eric and I.
1 carton (8 oz) ricotta cheese
3 Tbs. confectioner's sugar
1 tsp. vanilla extract
16 slices French bread (1/2" thick)
2 eggs
1 c. milk
2 c. sliced fresh or frozen strawberries

In a small bowl, combine ricotta, sugar, and vanilla; mix well. Spread 2 tablespoons each on eight slices of bread; cover with remaining bread. In a bowl, beat eggs and milk; soak sandwiches for 1-2 minutes PER side. Cook on a hot greased griddle for 5 minutes on each side or until golden brown and heated through. Serve with strawberries. Yield: 4-6 servings. Note: I had made 1/2 of this recipe, and it was more than enough for 2 people!
