Orange Cottage Cheese Salad

Do you ever get a craving for something that reminds you of home? I did during the holidays! In my family, we almost always had Orange Cottage Cheese Salad at Thanksgiving and Christmas. Somehow, it was almost always the women that liked it and the men that didn’t! I always enjoyed when my mom made the ‘salad’!

The basic ingredients are: cottage cheese, orange gelatin (I use sugar-free), mandarin oranges, and Cool Whip. The fruits can be changed, so you could use raspberry gelatin & raspberries for Christmas.

Cottage Cheese in Austria is not quite like cottage cheese in the USA – ask my mom about that one! :) I find in the US that it is creamier, and of course, it comes in a larger container! Our cottage cheese container sizes are just a little larger than a single serving size. There are two kinds of cottage cheese here – with chives or plain.

We also don’t have Cool Whip in Austria. I know that’s hard to imagine (I love Cool Whip in the US!), and I even had someone tell me that recently. So, I end up using whipping cream that I have to beat myself (with a mixer).

In the end, the fact that I used fat free cottage cheese and whipping cream probably even themselves out. But the taste of something that I love from the land that I come from is just a little reminder of home.
