Cottage Cheese Omelet

I stumbled upon this recipe in an older cookbook of mine, and now love it! It's low-fat, easy to cook, and tastes great!

Cottage Cheese Omelet

1 egg
2 egg whites
1 Tablespoon water
1 teaspoon dried parsley flakes
1/4 teaspoon salt
1/4 teaspoon dried whole margoram
1/4 teaspoon pepper
vegetable cooking spray
1 ounce low-fat cottage cheese

1. Combine egg, egg whites, water, and seasonings in a small bowl, stirring well.
2. Coat a medium-size nonstick skillet with cooking spray; place over medium heat until hot enough to sizzle a drop of water. Pour egg mixture into pan.
3. As egg mixture starts to cook, gently lift edges of omelet with a spatula, and tilt pan so that uncooked portion flows underneath.
4. When egg mixtuer is almost set, spoon cottage cheese over half of omelet; continue cooking until eggs are set.
5. Loosen omelet with a spatula, and fold in half; slide onto serving platter/plate and serve immediately. Enjoy!
