Christmas Baking: Truffles

I love easy recipes! As I was looking through recipes this week of which cookies to bake, I came across this one for Chocolate Truffles. I only made half of a recipe because chocolate chips are a premium (we have them sent or brought from the USA, as they're not available here). These are very sweet, so I would recommend making very small balls.


3 cups (18 oz) semisweet chocolate chips
1 can (14 oz) sweetened condensed milk
1 Tbs. vanilla extract
Chocolate sprinkles, colored sprinkles, baking cocoa, and/or finely chopped nuts, optional

In a microwave-safe bowl, heat chocolate chips and milk at 50% power until chocolate is melted. Stir in vanilla. Chill for 2 hours or until mixture is easy to handle. Shape into 1-inch balls. Roll in sprinkles, cocoa, or nuts if desired. Yield: about 4 dozen.
